Saira’s Aunt Esther's Apple Cake
Ingredients
4 c. peeled, cored, diced apples (Golden Delicious or Galas)
2 c. sugar
In a medium bowl, pour the sugar over the diced apples and stir. Let the apples stand for about an hour before you proceed with the rest of the recipe.
2 eggs
1/2 c. vegetable oil
2 tsp. vanilla
2 tsp. soda
2 tsp. cinnamon
1 tsp. salt
2 c. flour
1/2 c. cocoa powder, sifted
1 c. chopped walnuts
Powdered sugar to sift over cake
Method
In a large bowl, beat the eggs slightly, and then beat in the oil and vanilla.
Mix and sift the dry ingredients. Stir in all together with the egg-oil mixture and the apple-sugar mixture. Stir by hand! Don't use a mixer!
Stir in the nuts.
Pour into a prepared bunt cake pan. Bake at 350 degrees for about 1 hour.
Cool 10 minutes, then remove from the pan.
When completely cool, sift powdered sugar over the cake.
This cake keeps well. It mellows nicely after the first day. It also freezes well.
