Crazy Cake
This recipe makes a 13" x 9" cake and doesn’t use any eggs and is a very moist cake.
Ingredients
3 c. flour
2 c. sugar
1/3 c. cocoa
2 tsp. soda
1 tsp. salt
1 tsp. vanilla
3/4 c. vegetable oil
2 c. water
1 tbsp. vinegar
Method
Directly in the 13" x 9" cake pan, stir together the flour, sugar, cocoa, soda, and salt, until thoroughly blended. Be sure to get into the corners of the pan to stir it all up. Add the liquid ingredients and blend together until completely mixed. Again, get into the corners and be sure there are no dry ingredients left to stir up.
Bake at 350 degrees, 25-30 minutes. Cool in the pan and then frost with the following frosting:
Vanilla Frosting
Ingredients
2-1/2 Tbsp. flour
1/2 c. milk
1/2 c. butter (1 stick)
1 c. powdered sugar
1/4 tsp. salt
1 tsp. vanilla
Method
In a small saucepan, blend together the flour and milk, and bring to a boil, stirring constantly. Lower the heat, and cook and stir until it forms a thick paste. Cool the paste to lukewarm.
Cream the butter and powdered sugar together and add the salt. Add the lukewarm flour and milk paste, and beat with an electric mixer on high speed until light and fluffy. Beat in the vanilla.
Spread the frosting on the cooled cake.
