Hummus

Hummus is a delicious dip with toasted pita bread triangles, or it makes an excellent bagel sandwich with onions, sliced tomatoes, and sprouts. This is an untraditional Hummus with extra spices and pimentos (yummy!)

Ingredients


2 1-lb. cans garbanzo beans (chick peas); do not drain
2 cloves garlic
1 Tbsp. lemon juice
1/2 tsp. oregano
1/4 to 1/2 tsp. cayenne pepper
1/2 tsp. cumin
1 green onion, chopped
1 4-oz. jar diced pimento peppers, drained
extra virgin olive oil
1 Tbsp. chopped cilantro

Method

In a food processor, whoosh the chickpeas, garlic, lemon juice, spices and green onion until smooth. Add a little water if the mixture is too thick, but if you are going to use it for a sandwich filling, it should be thicker than for dip.

Fold in the pimento peppers and pour into a serving dish.

Smooth the Hummus, pour about 1 Tbsp of olive oil over the top, and sprinkle with the fresh cilantro. Serve at room temperature.
